Preparation

1.  Prepare the Lemon Herb Salmon: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, dried dill (or fresh dill), salt, and black pepper. Place the salmon fillets in a dish and pour the marinade over them. Let it marinate for at least 15 minutes.

2.  Preheat the Oven: Preheat your oven to 400°F (200°C).

3.  Roast the Salmon: Place the marinated salmon fillets on a lined baking sheet. Roast in the preheated oven for 12-15 minutes or until the salmon is cooked through and flakes easily.

4.  Prepare the Green Beans and Cherry Tomatoes: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for a minute. Add green beans and cherry tomatoes, then cook for 8-10 minutes or until the vegetables are tender yet still vibrant. Season with salt and black pepper.

5.  Cook the Couscous: In a separate saucepan, bring the vegetable broth or water to a boil. Stir in the couscous, olive oil, and salt. Remove from heat, cover, and let it sit for 5 minutes. Fluff the couscous with a fork.

Assemble, Garnish, and Enjoy!

To bring this feast together, assemble the Lemon Herb Salmon on a bed of semolina couscous, surround it with the sautéed green beans and cherry tomatoes, and let the flavors meld into a harmony that's nothing short of spectacular. Garnish with fresh parsley and lemon wedges for that extra touch of freshness.
